Green rooibos
Green rooibos tea has a very light, calming and delicate flavour. It has a subtle natural sweetness and does not become bitter. People tend to be more familiar with red rooibos or ‘red bush’, however green rooibos comes from the same plant. Both are from the Apalathus Linearis plant but undergo different processing to achieve the red or green version of rooibos. Green rooibos is stopped from being exposed to the air once harvested and instead the leaves are quickly dried which allows them to retain the green colour.
Many people are aware that green tea has higher health benefits than that of traditional black teas and this is much the same with rooibos. The minimal processing used for green rooibos tea means that the leaves have a far greater amount of antioxidants. Green rooibos is also very low in tannins which can cause a bitter taste with an over-brewed cup of tea. Therefore, rest assured, you can brew your green rooibos loose leaf tea for as long as you like and it will not become bitter, but keep its lovely delicate and light flavour.
1 heaped teaspoon per cup, boil the kettle, brew for 5 mins and serve without milk.
